A little human touch
A little human touch in your final masters can bring something to life and bring out things you haven’t heard before if your tracks are mastered well. Admittedly it’s easy and cheap to do AI mastering, but if tracks are all made in the box then giving them an analogue chain at the end can add depth, width and detail to your mix. Care and attention to detail
Care and attention to detail across the formats you wish for. For example, mastering for vinyl is a separate master which has to take into consideration the engineer cutting the lacquer. You can’t just send in a -9 LUFS to them, they will just send it back.

Ability to discuss with you if mixes are a little off and maybe need a tweak here and there before final mastering.

How you want your streamed album, EP or CD to run, for example space between tracks or crossover points.
